Afgan Lamb Skewers

Ingredients

  • 2 large onions chopped
  • 2 fresh long red chillies chopped
  • 2 garlic cloves chopped
  • 2kg diced lamb leg
  • 1 tbsp coriander
  • 3 tbsp oil (sunflower)

Method

  1. Blend chilli, garlic, onion and 125ml water to a fine pulp.
  2. Strain mixture into a bowl keeping the liquid.
  3. Add coriander, 1 1/2 tbsp salt and 2 tsp pepper to liquid.
  4. Marinate the lamb in the liquid overnight or minimum 3 hours.
  5. Grill for approx 7 minutes.
