Ingredients
- 1 3/4 cups (265g) self raising flour
- 1/4 cup (40g) plain flour
- 2/3 cups firmly packed (140g) brown sugar
- 2 eggs whisked
- 50g cool melted butter
- 1/2 cups (125ml) milk
- 2 medium overripe bananas smashed
- 1 tsp cinnamon
Method
- Preheat oven 180c
- Grease a loaf pan and line with baking paper
- Sift both flours and cinnamon into bowl
- Stir in sugar and combine
- Make a 'well' in the middle of the bowl
- Mix milk, eggs, cooled melted butter and bananas in a separate bowl
- Pour the wet ingredients into the dry 'well' and mix until just combined
- Pour mixture into pan trying to make a smooth-ish surface
- Bake for 45-50 minutes or until a skewer comes out clean
- Take out of the oven and let sit in the pan for 5 mins to sweat a little
- Then pop it out to finish cooling on a rack
- Serve while warm with lots of butter
