Banana Bread

Ingredients

  • 1 3/4 cups (265g) self raising flour
  • 1/4 cup (40g) plain flour
  • 2/3 cups firmly packed (140g) brown sugar
  • 2 eggs whisked
  • 50g cool melted butter
  • 1/2 cups (125ml) milk
  • 2 medium overripe bananas smashed
  • 1 tsp cinnamon

Method

  1. Preheat oven 180c
  2. Grease a loaf pan and line with baking paper
  3. Sift both flours and cinnamon into bowl
  4. Stir in sugar and combine
  5. Make a 'well' in the middle of the bowl
  6. Mix milk, eggs, cooled melted butter and bananas in a separate bowl
  7. Pour the wet ingredients into the dry 'well' and mix until just combined
  8. Pour mixture into pan trying to make a smooth-ish surface
  9. Bake for 45-50 minutes or until a skewer comes out clean
  10. Take out of the oven and let sit in the pan for 5 mins to sweat a little
  11. Then pop it out to finish cooling on a rack
  12. Serve while warm with lots of butter
