Ingredients
- 2 barramundi fillets (skin off)
- 1 tbsp canola oil
- 2 tsp seasoning salt
- 2 tsp szechuan pepper (cracked/lightly ground)
- 3 tbsp butter
- 2 cloves garlic, crushed (not minced)
- 1 lemon
- small bunch of fresh basil, finely chopped
Method
Prep
- Warm an oven to 150 degrees
- Place a skillet or non-stick pan on medium-high heat
Fish
- Coat the barramundi in the canola oil, salt and szechuan pepper
- Prepare a skillet or non-stick pan - medium high heat
- Cook for 4-5 minutes on each side, until lightly browned - don't worry about cooking it through
- Place in the oven
Sauce
- In the same pan, reduce the heat and melt the butter
- Add the garlic and cook until brown
- Remove the garlic (bin it immediately)
- Add the chopped basil
- Add the lemon juice, about half and then the other half to taste
Serve
- Move the fish to a plate
- Spoon the sauce over the fish
- Serve immediately
