Barramundi

Ingredients

  • 2 barramundi fillets (skin off)
  • 1 tbsp canola oil
  • 2 tsp seasoning salt
  • 2 tsp szechuan pepper (cracked/lightly ground)
  • 3 tbsp butter
  • 2 cloves garlic, crushed (not minced)
  • 1 lemon
  • small bunch of fresh basil, finely chopped

Method

Prep

  1. Warm an oven to 150 degrees
  2. Place a skillet or non-stick pan on medium-high heat

Fish

  1. Coat the barramundi in the canola oil, salt and szechuan pepper
  2. Prepare a skillet or non-stick pan - medium high heat
  3. Cook for 4-5 minutes on each side, until lightly browned - don't worry about cooking it through
  4. Place in the oven

Sauce

  1. In the same pan, reduce the heat and melt the butter
  2. Add the garlic and cook until brown
  3. Remove the garlic (bin it immediately)
  4. Add the chopped basil
  5. Add the lemon juice, about half and then the other half to taste

Serve

  1. Move the fish to a plate
  2. Spoon the sauce over the fish
  3. Serve immediately
