Candied Citrus Peel

Ingredient

  • 3 large (navel is best) orange
  • 1 1/2 cups (330g) of white sugar
  • 1 tbsp slivered pistachios
  • 1 tbsp slivers almonds

Method

  1. Bring 1 litre of water to the boil.
  2. Add 1/2 tsp of salt to the water.
  3. While boiling, remove the rind from the oranges and slice into slithers, be careful to remove as much white pith as possible as that is bitter.
  4. Blanch the rind in the boiling water for 2 minutes and drain.
  5. Rinse the rind under cold water.
  6. Repeat this process 3 more times. It is removing the bitterness from the orange rind.
  7. In a small sauce pan combine the sugar and 375ml of water until the sugar is dissolved.
  8. Continue to heat on a low temperature for 6-8 minutes without stirring or until the temperature hit 100c.
  9. Once at temperature add orange rind and boil for 5 minutes.
  10. Then add Pistachios and almond stirring gently to combine.
  11. Store with extra syrup on top for up to 2 weeks.
