Ingredient
- 3 large (navel is best) orange
- 1 1/2 cups (330g) of white sugar
- 1 tbsp slivered pistachios
- 1 tbsp slivers almonds
Method
- Bring 1 litre of water to the boil.
- Add 1/2 tsp of salt to the water.
- While boiling, remove the rind from the oranges and slice into slithers, be careful to remove as much white pith as possible as that is bitter.
- Blanch the rind in the boiling water for 2 minutes and drain.
- Rinse the rind under cold water.
- Repeat this process 3 more times. It is removing the bitterness from the orange rind.
- In a small sauce pan combine the sugar and 375ml of water until the sugar is dissolved.
- Continue to heat on a low temperature for 6-8 minutes without stirring or until the temperature hit 100c.
- Once at temperature add orange rind and boil for 5 minutes.
- Then add Pistachios and almond stirring gently to combine.
- Store with extra syrup on top for up to 2 weeks.
