Dragon Wings

Ingredients

Dragon Sauce

  • 75g butter
  • 4 tbsp sriracha
  • 3 tbsp tomato sauce
  • 2 tbsp rice wine vinegar
  • 1/2 tsp worcestershire
  • 1/4 tsp mustard powder
  • 1/4 onion powder
  • 1 tsp caster sugar

Chicken

  • 1.5kg chicken wings - split into drumettes and wingettes
  • 1 tsp caster sugar
  • 1 tsp salt
  • 1 tbsp oil
  • 2 tbsp of cornflour (if deep frying chicken)

Method

Sauce

  1. Add all ingredients into saucepan
  2. Over medium heat, whisk together until butter has melt and all has blended

Chicken baked

  1. Heat oven to 220 degrees
  2. Toss chicken in sugar, salt and oil.
  3. Space out chicken on baking tray making sure that non are overlapping
  4. Bake for 25-30mins turning once for an even crispy all round

Chicken deep fried

  1. Heat oil 175
  2. Coat chicken in sugar, salt, and cornflour
  3. Deep fry at 175 degrees in batches until golden (5min approx)

Toss wings in sauce and serve with blue cheese sauce.
