Ingredients
- 1 bunch of carrots (preferably with tops on, rainbow is best but orange also good)
- 1 Tbsp cinnamon
- Salt and pepper
- 1 tin chickpeas
- portion of whipped feta (see whipped feta recipes)
- Harissa (see harissa recipe)
- Olive oil
- honey
Method
- Chop off carrot tops, clean and quarter carrots ensure all are the same thickness so they cook evenly, cover in cinnamon, salt and pepper to your liking and a dizzle of olive oil.
- Place in a pan with drain chickpeas and toss till all are coated.
- Put in a oven at approx 180c cook for 45min or until crispy, in the last 10 minutes drizzle honey on top.
- Plate up, smear a very generous amount of whipped feta onto the base of the plate (approx 1cm thick all over) dab teaspoons of harissa on top to your spice level, the place carrots and chickpeas on top in a big pile, garnish with salad greens or herbs.
