Granola

Ingredients

  • 2 cups whole oats
  • 1/3 cup honey
  • 1/3 cup brown sugar
  • 1/3 cup coconut oil
  • Scoop of pecans, chopped
  • Scoop of flaked almonds, chopped
  • Scoop of dried cranberries
  • Scoop of dried papaya, chopped

(Note any fruit and nuts can be changed to your tastes, just chop all the a similar size)

Method

  1. Pre-heat oven 160-150c
  2. Mix sugar honey and oil in a medium pot on low a simmer, mixing continuously until combined.
  3. Take the pot off the heat.
  4. Add the oats and nuts to the pot stirring until they evenly coated in the mixture.
  5. Spread the oats and nuts mixture across a baking pan line with baking paper, until and even thickness.
  6. Place in oven.
  7. Turn the mixture every 5 minutes so as to prevent burning.
  8. After 10 minutes of being in the oven turn in the fruit and cook for a further 10minutes turning it every 5 minutes.
  9. The mixture should be in for a total of 20minutes with 4 turns.
  10. Leave to cool, the sugars will harden as it cools.
  11. Store in a jar for up to 2 weeks.
