Ingredients
- Cos lettuces x4
- 1 cup mayonnaise (see Mayonnaise)
- Lemon juice
- Parmesan
- Whole almond, chopped roughly in half
- Olive oil
- Honey
Method
- Quarter cos lettuces and layout on a plate or large flat blow.
- Roughly chop almonds and toast in a pan with a small amount of olive oil, adding a small squeeze of honey at the very end. (make sure to not cook the honey for too long as it will burn)
- Mix a small amount of lemon juice and olive oil with the mayo till it is a runnier consistency and cover the lettuce, mixing well.
- Grated parmesan over the lettuce and toss the almonds on top.
- Serve fresh.
