Ingredients
- 1 egg
- 125g softened butter
- 100g caster sugar
- 1 1/4 cups of self raising flour
- Raspberry jam
Method
- Preheat oven to 180c (fan forced)
- Beat butter and sugar together till creamy
- Add egg and beat till combined
- Add flour and stir in until combined
- Roll mixture into small balls and place on baking tray (note they will flatten out so not too big)
- Place a thumb print in the middle be sure not to push through
- Place a small amount of jam in the holes
- Place in the oven for 12-15 mins, or until just golden
- Leave to cool, the biscuits will harden up as they dry
