Jam Drops

Ingredients

  • 1 egg
  • 125g softened butter
  • 100g caster sugar
  • 1 1/4 cups of self raising flour
  • Raspberry jam

Method

  1. Preheat oven to 180c (fan forced)
  2. Beat butter and sugar together till creamy
  3. Add egg and beat till combined
  4. Add flour and stir in until combined
  5. Roll mixture into small balls and place on baking tray (note they will flatten out so not too big)
  6. Place a thumb print in the middle be sure not to push through
  7. Place a small amount of jam in the holes
  8. Place in the oven for 12-15 mins, or until just golden
  9. Leave to cool, the biscuits will harden up as they dry
