Ingredients
- 1 packet fresh udon noodles
- 1 shallot
- 1 tsp (1-2 cloves) of minced garlic
- 1 tbsp Gochujang
- Generous splash of light soy (approx 1 tbsp)
- Generous squeeze of honey (approx 2 tsp)
- 250g of roughly slice Kimchi (any kind you fancy, add more if your fan)
- 2 eggs (to serve optional)
- Spring onion (to serve optional)
Method
- Soak noodles in simmer water, to boil.
- Dice shallot, mince garlic, and chop Kimchi. (slice option spring onions)
- Heat up a wok or frying pan on high heat.
- (Heat up separate pan for and start cooking optional fried eggs)
- Add oil and Gochujang, garlic and shallots, cook on high heat quickly.
Do not sweat the onion. - Add soy, honey and Kimchi. Heat through and stir to combine.
- Drain and add noodles stir and toss to coat the noodles evening.
- Serve with fried egg and sliced spring onion.
