Ingredients
- 2 eggs (whole)
- 2 egg (yokes only)
- 1 cup caster sugar
- 1 tbsp lemon rind
- 1/2 lemon juice
- 150g unsalted cubed butter
Method
- Place 2 eggs, 2 yokes, sugar, lemon rind and lemon juice in bowl and whisk to combine.
- Transfer mixture to a large saucepan over medium heat stir for 2 minutes until sugar is dissolved.
- Reduce the heat to low add the butter in sections stirring to combine as going.
- Cook for a further 4-6 minutes stirring constantly until the curd is thick enough to coat the back of the spoon.
- Strain in a container or jar, leave to cool before covering.
