Lemon Curd

Ingredients

  • 2 eggs (whole)
  • 2 egg (yokes only)
  • 1 cup caster sugar
  • 1 tbsp lemon rind
  • 1/2 lemon juice
  • 150g unsalted cubed butter

Method

  1. Place 2 eggs, 2 yokes, sugar, lemon rind and lemon juice in bowl and whisk to combine.
  2. Transfer mixture to a large saucepan over medium heat stir for 2 minutes until sugar is dissolved.
  3. Reduce the heat to low add the butter in sections stirring to combine as going.
  4. Cook for a further 4-6 minutes stirring constantly until the curd is thick enough to coat the back of the spoon.
  5. Strain in a container or jar, leave to cool before covering.
