Ingredients

  • Tomatoes
  • Salt (flaked is best)
  • Basil (fresh)

Method

  1. Slice tomatoes into quarters.
  2. Add to a pot on medium heat with a light sprinkle of salt for ~10 minutes until soft.
  3. Spoon in softened tomatoes into a mill and grind the tomatoes.
  4. Add the milled tomatoes to another pot and boil for at least 30 minutes, until about half of the water has evaporated.
  5. Add a sprig of basil and store in sterilised jars.

Notes

  • Different tomatoes have different water quantities. The amount of boiling in step 4 will likely change.
