Serves 1
2 slices of sourdough/or good bread
1 rash of bacon
Generous handful of baby spinach
Herby Mayonnaise (mix thyme, oregano, rosemary with standard mayo)
Tomato chutney
1/4-1/2 avocado
Heat up a pan and cook bacon.
While cooking bacon, toast sliced bread.
Place/spread sliced avocado, mayonnaise and tomato chutney on to the toast.
Add bacon and spinach.
Serve fresh with orange juice. :)
