Self Saucing Chocolate Pudding

Ingredients

Sponge
  • 60g butter
  • 1 egg
  • 1/2 cup caster sugar
  • 1 cup self-raising four
  • 1/4 cup cocoa powder
  • vanilla essence or extract
  • 1/2 cup milk

Sauce

  • 1/2 cup caster sugar
  • 2 cups hot water
  • 2 tbsp cocoa power

Method

Sponge
  1. Cream butter and sugar
  2. Add egg and mix well
  3. Sift in flour and cocoa
  4. Mix and add milk until it forms a soft mixture, like a batter
  5. Place in a deep (greased) oven dish
Sauce
  1. Mix together sugar, cocoa with 2 cups of hot water
  2. Gently pour over a spoon onto the pudding
Bake
  1. Bake in a moderate oven (160 deg) for 35-40 minutes
  2. Serve hot or cold
