Shanghai-Korean Pork

Ingredients

  • 250g Pork belly cubed
  • 2 tbsp peanut oil
  • 1 tbsp caster sugar
  • 1 tbsp light soy
  • 1 tbsp dark soy
  • 3 tbsp shaoxing wine (chinese cooking wine)
  • 1 tbsp korean chilli paste (gochujang)
  • 2 cups water

Method

  1. Boil pork 5 mins
  2. Heat oil and sugar melting them together on medium heat
  3. Coat pork in sugar oil mixture till browned
  4. Add soy (both), shaoxing, water and chilli paste
  5. simmer for 1 hour - add water by the half cup if it's too stick too soon
  6. optionally, cook on high heat for 10 mins if too watery, avoid burning it
