Ingredients
- 1 cup bulgar
- 1/2 red onion
- Large bunch of parsley
- Half bunch of mint
- 6 cherry tomatos
- 1/2 juice of 1 lemon
Method
- Finely dice onion and leave to soak in water for at least 30 minutes (replace the water occasionally if longer)
- Cook bulgar 30 minutes in 3 cups of simmering water, stir to prevent sticking to the bottom.
- Chop up parsley, mint and tomato’s to the same size as onions.
- Strain onions.
- Mix all ingredients together.
- Dress with lemon and salt.
