Teriyaki Chicken

Ingredients

Teriyaki sauce (makes 350ml)

  • 125ml light soy
  • 100ml mirin
  • 100ml sake or soju
  • 40g caster sugar

Chicken

  • 3 chicken thighs
  • 1 tsp cornflour
  • 1 tsp peanut oil
  • 1/4 cup light teriyaki sauce
  • 1/2 tsp grated ginger

Method

Teriyaki sauce

  1. Mix all ingredients together in saucepan
  2. stir on low heat until sugar is just dissolved
  3. cool and store in a jar

Chicken

  1. Slice chicken thinly and toss with cornflour till just coated.
  2. Heat oil in a pan on high and fry chicken until brown on all slices but not completely cooked through.
  3. Add teriyaki sauce and toss chicken until sauce thickens.
  4. Remove chicken just before fully cooked and allow to cool/rest and finish cooking.
