Vindaloo - Work in progress

Ingredient

  • 600g-900g cheap beef or lamb
  • 500ml beef stock
  • 8 cloves of garlic
  • 1 red onion
  • 1 inch ginger
  • 3 bay leaves
  • 3 tbsp white vinegar
  • 4 chillies 1/4 tps flakes
  • 1 tbsp butter/gee
  • 3 tbsp coriander powder
  • 1 tbsp cumin
  • 6 cloves of garlic
  • 1/2 tps cinnamon
  • 1/4 tps black pepper
  • 1/2 tps gengreek
  • 1/4 tps fennel seeds

Method

  1. Combine and grind spices.
  2. Dice the meat.
  3. Mix the space with vinegar and rub into the meat.
  4. Finely dice onion, garlic and chilli.
  5. Heat cast iron pot, frying onion, garlic, chilli with butter until caramelised.
  6. Add meat and cook until lightly brown.
  7. Add stock and bay leaves, leave to simmer for 1hr with lid on.
  8. Remove lid and leave to simmer for 30 minutes until stock has reduced.
