Warm summer salad

ingredients

  • 1/4 jap pumpkin
  • 1 capsicum
  • 5 cherry tomatoes halved
  • hand full of rocket
  • lightly toasted flaked almonds
  • 1/3 block of danish feta crumbled. (be sure not add too much)
  • 1/3 block of Halloumi cubed
  • large drizzle of Honey

Method

  1. Pre-heat oven to 200c.
  2. Chop pumpkin into 2/3cm cubes and coat in honey salt and oil.
  3. Place pumpkin even on a tray and bake for 30 minutes, turning occasionally to get a crispy edge.
  4. Meanwhile - place whole capsicum halved on BBQ grill or pan and blister the skin. once blister cut into 2/3cm pieces
  5. On a hot pan cook halloumi cubes turn so as to get crispy on all sides.
  6. Once all cooked combine all ingredients.
