Ingredients
- Pork belly
- 2 spring onions - use just the tops cut into large tubes
- Peanut oil
- 1 cups sake (or a neutral flavoured alcoholic soju works)
- 1 cup light soy
- 2/3 cups caster sugar
- 2 inch of ginger chunky cut into disks - don’t peel
- 2 cups of water
Method
- Mix all ingredients together in a pot except the pork and bring to the boil
- Meanwhile sear the pork belly in a heavy pan till crisp on all sides
- Submerge pork in marinade
- Simmer for minimum of 1.5hr, flip the pork about half-way if needed
- Remove from marinade and slice into thick steaks
