Ramen Soup

Ingredients

  • 1 tbsp sesame oil
  • 1/2 minced brown onion
  • 2 tsp minced ginger
  • 2 tsp minced garlic
  • 3 tbsp miso
  • 2 tbsp mirin
  • 200g pork mince
  • 2 cups chicken stock
  • 1 cup dashi stock
  • 3 spring onion tops (green bits) chopped into tubes

Method

  1. Heat sesame oil in a deep pan
  2. Add the brown onion, ginger and garlic
  3. Cook until fragrant - approx 10mins
  4. Add pork minced breaking up the meat until everything is combined - approx 5mins
  5. Stir in miso paste, chicken stock, dashi stock and mirin until all combined
  6. Add spring onion
  7. Increase the heat to a medium and simmer for 10 mins
  8. Reduce heat to med-low and skimming off the foam as needed
  9. Strain soup and season to taste
  10. Pour soup over cooked noodles
  11. add toppings (pork, boiled egg, spring onion and nori)
