Ingredients
- 1 tbsp sesame oil
- 1/2 minced brown onion
- 2 tsp minced ginger
- 2 tsp minced garlic
- 3 tbsp miso
- 2 tbsp mirin
- 200g pork mince
- 2 cups chicken stock
- 1 cup dashi stock
- 3 spring onion tops (green bits) chopped into tubes
Method
- Heat sesame oil in a deep pan
- Add the brown onion, ginger and garlic
- Cook until fragrant - approx 10mins
- Add pork minced breaking up the meat until everything is combined - approx 5mins
- Stir in miso paste, chicken stock, dashi stock and mirin until all combined
- Add spring onion
- Increase the heat to a medium and simmer for 10 mins
- Reduce heat to med-low and skimming off the foam as needed
- Strain soup and season to taste
- Pour soup over cooked noodles
- add toppings (pork, boiled egg, spring onion and nori)
